Saturday 27th February saw the district round of the
2015/16 Rotary Young chef competition held in Bournemouth. The competition was
once again a great success with 11 students from throughout the region
participating all demonstrating an extremely high standard.
Guernsey was represented by Jacques Gallagher of St
Sampsons High School who won the local competition in November. His chosen menu was:
- Pan seared scallops with Jerusalem artichokes
Volute
- Pan roasted Guinea fowl breast served with stuffed
ballotine of Guinea fowl, honey parsnip tarte tatin,char grilled courgettes and
port reduction
- Chocolate Fondant served with clementine marmalade
chocolate sauce and Creme fraiche
Jacques was supported by his teacher Paul Giles
Phillips of St Sampsons High School and his mother Christine and they were
hosted by Brian Acton of Rotary Club of Guernsey.
Whilst Jacques was not successful in being placed in
this round he should be very proud of his achievements in producing a first
class menu and participating in such a challenging and demanding
competition.
